We have been eating a veggie based diet for the past three months. I was surprised at how easy it was to give up eating meat. I'm not sure if we will eat like this forever - but for now- I like this change. I have more energy- and feel lighter after eating a meal. We do still eat fish about once a week which is nice. Love going out to sushi!!
It is a good time of year to eat a vegetable and fruit based diet. The farmer's markets are full with colorful delicious foods. There is so much variety and so much flavor to explore. It is fun coming up with meal ideas.
One of our favorites is a veggie sandwich on dark rye bread.

*Generous Swipe of Cream Cheese
*English Cucumber Sliced
*Colorful Bell Peppers Sliced
*Mixed Greens or Arugula
*Red Pepper Flakes
Gobble it up....
